CAMELINA, BUTTER-TASTING, AND HONEY BANANA BREAD

Ingredients
Bowl 1
- 1 ½ cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 pinch of salt
Bowl 2
- 2 ripe bananas, mashed
Bowl 3
- 2 eggs
- ½ cup brown sugar
- 1 tsp vanilla
- 3/4 cup Greek yogurt
- 3 tbsp butter-flavored camelina oil
- 3 tbsp camelina honey
Instructions
- Preheat the oven to 180°C (350°F) and spray a loaf pan with butter-flavored Fitcook spray.
- In a bowl, mix the flour, baking powder, baking soda, and salt. Set aside.
- Mash the bananas in another bowl until smooth. Set aside.
- In a third bowl, whisk the eggs with the brown sugar, vanilla, and camelina honey until the mixture is smooth.
- Add the Greek yogurt and butter-flavored camelina oil, then mix well.
- Incorporate the mashed bananas into the wet mixture.
- Gradually add the dry ingredients to the wet mixture, stirring gently until a homogeneous batter is obtained (do not overmix).
- Pour the batter into the pan.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before unmolding, then slice and enjoy.
