Camelina pudding with apples & blueberries

1/2 cup (125 ml) Quebec blueberries

1/4 cup of plain camelina seeds Signé camelina

1/2 cup (125 ml) plain Greek yogurt

1/2 cup (125 ml) applesauce

Lemon zest, to taste


  1. In a small microwave-safe bowl, place 2/3 of the blueberries. Heat in the microwave for one minute. Using a fork, mash the blueberries to obtain a coulis. Divide into two glasses.
  2. In another container, place the camelina seeds, Greek yogurt and applesauce. Mix, then place in the glasses on top of the coulis.
  3. Use the remaining blueberries and lemon zest as a garnish. Leave in the refrigerator for an hour (or more) before serving.
