100% homemade dumplings with chicken, maple and black garlic

Preparation: 30 minutes | Cooking time : 15 minutes | Servings: 4 starters
Ingredients:
Dumpling dough
200g unbleached white flour
100g lukewarm water (boiled then left for 5-10 minutes at room temperature)
Dumpling stuffing
1 cup chopped chicken
1/2 cup finely grated carrots
2 teaspoon chopped ginger
2 teaspoon chopped garlic
1 pinch of chopped fresh parsley
1 pinch of chopped fresh coriander
1 stalk of green onion, finely chopped
1 tbspof roasted camelina oil Signé Caméline
1 tbsp sambal oelek hot sauce
1 pinch of salt
Maple-black garlic sauce
1 teaspoon salted herbs
1 teaspoon sambal oelek hot sauce
1 teaspoon black garlic puree
1 teaspoon chopped ginger
1 teaspoon chopped garlic
1 chopped green onion
1/4 cup maple syrup
1 tablespoon of water
1 generous pinch of salt
Other ingredients
A dozen thinly sliced shiitake mushrooms, stems removed
A little chopped green onion
Water for cooking
Virgin camelina oil Signé Caméline for cooking
Preparation:
For the dumpling dough
1. Mix the two ingredients, knead lightly until you obtain a smooth dough, adding flour if necessary. Refrigerate.
For the stuffing
1. Mix all the ingredients vigorously until you have a slightly sticky mixture
For the sauce
1. Mix all the ingredients
To serve
1. Stuff and fold the dumplings (see the video on Instagram!)
2. Cook them in a non-stick pan covered with 1 inch of water and a touch of oil
3. Remove the lid after a few minutes and let the water evaporate leaving only the oil
4. Add the shitakes and sauté for an additional 1 to 2 minutes
5. In a bowl, serve the dumplings with the shitake and garnish with a few green onions. Dip in the sauce!
