Air Fryer Fried Ramen Spring Rolls

Ingredients:
2 packets of dry ramen, 85 g each (without broth packets)
30 ml (2 tbsp.) roasted camelina oil Signé Caméline
1 carrot cut into julienne strips
1 red pepper cut into juliennes
1 zucchini cut into julienne
15 ml (1 tbsp) chopped garlic
15 ml (1 tbsp) chopped ginger
80 ml (1/3 cup) chopped green onions
30 ml (2 tbsp) oyster sauce
10 rice leaves
For the spicy mayo:
125 ml (1/2 cup) mayonnaise
10 ml (2 tsp) roasted camelina oil Signé Caméline
5 to 10 ml (1 to 2 tsp) sriracha (to taste)
1/2 lime (zest and juice)
Preparation:
1. In a large pot of boiling water, cook the ramen for 3 minutes. Drain.
2. In a large skillet, heat half the camelina oil over medium heat. Cook the carrot, pepper and zucchini for 3 to 4 minutes.
3. Add the garlic and ginger, then continue cooking for 1 minute, stirring.
4. Add green onions, oyster sauce and ramen and stir. Remove from heat and let cool.
5. In a deep plate filled with lukewarm water, immerse a rice paper for about 1 second so that it softens. Lightly oil the work surface, then place the rice paper on it.
6. About 2.5 cm (1 in) from the edge of the rice paper, place 80 ml (1/3 cup) of ramen mixture. Fold the sides of the rice paper over the filling and roll up tightly. Cover with a damp cloth and set aside. Make the rest of the rolls in the same way.
7. Brush the rolls with the remaining camelina oil.
8. Preheat air fryer to 400°F (205°C).
9. Place the rolls in the basket of the hot air fryer, without stacking them. Bake for 12 to 15 minutes, turning the rolls halfway through cooking, until crispy.
10. Meanwhile, in a bowl, mix the spicy mayo ingredients.
11. Serve the rolls with the spicy mayo.
