Three ingredients: honey, camelina seeds and frozen berries

Preparation: 10 minutes
Cooking time: 3 hours
Yield: around ten rolls

Ingredients

  • 1 cup ( 250 ml ) blueberries (thawed if frozen)
  • 1 1/2 cups ( 375 ml ) strawberries, hulled (thawed if frozen)
  • 1 tbsp ( 15 ml ) lemon juice
  • 1 tsp ( 5 ml ) ground camelina seeds*
  • 5 tsp ( 25 ml ) honey
  • 2 tsp ( 10 ml ) vanilla extract
  • 1/2 tsp ( 2.5 ml ) ground cinnamon
  • 1 pinch of salt

Preparation

  1. Preheat oven to 75°C (170°F).
  2. Line a large baking sheet with parchment paper. Set aside.
  3. In a blender, mix all the ingredients until you obtain a perfectly smooth texture.
  4. Using a spatula, pour the contents of the blender onto the baking sheet and spread evenly over the surface.
  5. Bake for approximately 3 hours. Check the mixture at the end of cooking to avoid overcooking (overcooking will make the mixture dry and brittle). The mixture is ready when it feels evenly and slightly sticky to the touch, leaving no residue on your fingers.
  6. Allow to cool completely before cutting.
  7. Using scissors, cut the mixture, including the parchment paper, into equal strips. Roll each strip up and enjoy!

These rolls can be stored for up to 12 days at room temperature in an airtight container.

*Camelina seeds are a local option to replace chia seeds; but if you don't have any on hand, you can substitute the latter.

GENEVIÈVE'S ECONOMIC ADVICE

Fruit roll-ups are an infinitely versatile dish. Here are some other ingredients you can use to make them:

Tired or overripe fruit : Soft raspberries, blackened bananas... Once blended and put in the oven or dehydrator, it will be unnoticed!

Fruit Compote : Use leftover homemade compote or a leftover store-bought compote. Whether it's apple, peach, pear, or something else, add your own personal touch: vanilla, spices, citrus zest, etc.

Vegetables : What I love about rolls is the possibility of creating almost infinite flavor combinations! Dare to mix fruits and vegetables in the same dish. Here are some winning combinations: beetroot and berries, sweet potato and pear, carrot and orange zest, squash and mango.

Peels : Peels and scraps from fruits and vegetables (preferably organic) can find their place in homemade fruit rolls: apples, sweet potatoes, beets, carrots... Give them a new life!
